Dubai Chocolate

Materials

  • 200 grams of shredded wheat (cut into small pieces)
  • 56 grams unsalted butter
  • 185 grams AFFRESCO PEANUT PRALINE 20
  • 30 grams tahini (optional)
  • 540 grams AFFRESCO CUVERTURE 55 BITTER
  • A pinch of salt
  • Sea salt for topping

FILLING

Frying the kadayıf: Cut the kadayıf into small pieces. Heat a large pan over medium heat and add the butter. Add the kadayıf and coat thoroughly with the butter. Cook, stirring constantly, until golden brown for 10-15 minutes.

Preparing the Filling: Put the fried shredded wheat in a bowl. Add the pistachio cream, tahini and a pinch of salt. Mix well to prepare your filling.

PREPARATION OF CHOCOLATE

Melting Chocolate in a Bain-Marie: Put water in a pot and bring to a boil. Place a bain-marie on top and add the AFFRESCO chocolate. Heat, stirring until the chocolate is completely melted.

Coating: Coat your chocolate mold with chocolate. Pour tempered chocolate onto the bottom and sides, spreading evenly.

Add the Filling: Add 30-45 grams of filling into each cup. Pour more chocolate on top and smooth.

COOLING and SERVICE

Cooling: Cool the chocolates in the refrigerator for 30 minutes. Finish decorating with sea salt.

Serving: After cooling, take out your chocolate bars and enjoy.
